This study aimed to assess the sensory attributes and general acceptability of steamed meat of broiler chickens fed with non-fermented (control) and fermented diets. The study used water, water + coco vinegar, and water + RPL8+AKE probiotic as fermenting causal agents. A total of thirty (30) breast carcass (steamed at 100oC for 10-15 minutes) samples per treatment at five grams (5g) per sample were utilized for evaluation. A group of thirty trained taste panelists composed of Food Technology students assessed the (...) sensory attributes using the quality score and Hedonic scale sheets. Descriptive statistics were used in the sensory evaluation, and analysis of variance (ANOVA), and multiple comparison test using Tukey’s honestly significant difference (HSD) test was used to compare the treatment means of the sensory attributes of the steamed meat samples in terms of skin color, flesh color, aroma, texture, taste, and general acceptability. The rating scores on skin colors (p-value=0.050), and texture (p-value=0.013) of steamed meat of broiler chickens fed with non-fermented and fermented diets were significantly different at a 5% level. Results revealed that the fermented diets have improved the broilers' skin colors (yellowish cream) and improved the texture quality of meat (moderately firm). Based on ANOVA, there is no significant difference observed in the descriptive scores in relation to flesh color (p-value=0.171), aroma (p-value=0.621), taste (p-value=0.723) and general acceptability (p-value=0.491). However, the steamed carcass of broiler-fed fermented diets (coco vinegar and probiotic) is slightly preferred based on ranks. The central claim of the volume in which this chapter appears (*Fermented Landscapes*, ed. Colleen C. Myles, Univ. of Nebraska Press 2020) is that the chemical process of fermentation supplies an apt metaphor for understanding certain kinds of landscape change. The kinds of landscape change in question are, fortuitously, those often occasioned by commercial processes centered around fermentation itself: the commercial production of beer, wine, spirits, cider, cheese, and related fermented products. But what makes this metaphor apt? Which (...) kinds of landscape change are most fruitfully conceptualized as exhibiting “fermentation,” and how do they differ from other sorts of landscape change? What is it about fermentation-centered industries that effects fermentation-modeled landscape change, and when (if ever) do these industries contribute to other, different forms of landscape change? Is there any essential reason why fermentation-centered industries should create in their environs processes of transformation usefully characterized in terms of ferment? Or is this little more than a happy linguistic coincidence? In short: how much mileage do we get from this metaphor? This chapter offers a number of considerations germane to an evaluation of the “fermented landscapes” research paradigm—considerations to which readers may wish to remain alert as they study the contributions in this volume. This paper develops a normative framework for both conceptualizing and assessing various institutional possibilities for democratic modes of constitutional change, with special attention to the recent ferment of constitutional experimentation. The paper’s basic methodological orientation is interdisciplinary, combining research in comparative constitutionalism, political science and normative political philosophy. In particular, it employs a form of normative reconstruction: attempting to glean out of recent institutional innovations the deep political ideals such institutions embody or attempt to realize. Starting from the assumption that (...) contemporary constitutional democracies are attempting to realize the broader ideals of deliberative democratic constitution (ideals outlined briefly in the first section), the paper proposes an evaluative framework, comprised of six criteria, for assessing various mechanisms of constitutional change. It argues that democratic forms of constitutional change embody six distinct ideals—operationalizability, structural independence, democratic co-authorship, political equality, inclusive sensitivity, and reasons-responsiveness—and that these ideals can be used to gauge the normative worth of different mechanisms for carrying out such change. The framework is developed with reference to recent constitutional developments (e.g., in Venezuela, South Africa, Columbia, Bolivia, and Iceland) highlighting distinct criteria and showing how they appear to capture the general direction of institutional innovation. The paper conjectures that the set of six criteria yield the best normative reconstruction of the crucial ideals embodied in the constitutional change mechanisms of contemporary constitutional democracies, and so, ought to be used for purposes of evaluating institutional design proposals. The cultural consumption research landscape of the 21st century is marked by an increasing cross-disciplinary fermentation. At the same time, cultural theory and analysis have been marked by successive ‘inter-’ turns, most notably with regard to the Big Four: multimodality (or intermodality), interdiscursivity, transmediality (or intermediality), and intertextuality. This book offers an outline of interdiscursivity as an integrative platform for accommodating these notions. To this end, a call for a return to Foucault is issued via a critical engagement with (...) the so-called practice-turn. This re-turn does not seek to reconstitute venerably Foucauldianism, but to theorize ‘inters-’ as vanishing points that challenge the integrity of discrete cultural orders in non-convergent manners. The propounded interdiscursivity approach is offered as a reading strategy that permeates the contemporary cultural consumption phenomena that are scrutinized in this book, against a pan-consumptivist framework. By drawing on qualitative and mixed methods research designs, facilitated by CAQDAS software, the empirical studies that are hosted here span a vivid array of topics that are directly relevant to both traditional and new media researchers, such as the consumption of ideologies in Web 2.0 social movements, the ability of micro-celebrities to act as cultural game-changers, the post-loyalty abjective consumption ethos. The theoretically novel approaches on offer are coupled with methodological innovations in areas such as user-generated content, artists’ branding, and experiential consumption. (shrink)

"This book explores the relationship between performance and activism in Chile as a form of political expression and citizen participation during the period 2010-2020. Since the student mobilizations of 2006, the social movements that have taken place in Chile are characterized, in many cases, by the appropriation of public space and the political use of the body. This became particularly evident during the social outbreak of October 2019. The social upheaval was accompanied by a cultural explosion, where the arts in (...) all their dimensions played a crucial role as new strategies of collective action. The research proposes two hypotheses about this cultural revolution. Firstly, that this explosion of artistic activism had been fermenting for at least a decade (2010-2020) within the social movements, using performance and art as expressions of collective action. These artistic drivers, catalysts of this cultural revolution, have been mobilized around three fundamental axes of social demands: human rights, education, and feminism. The second hypothesis is that artistic activism in Chile between 2010-2020 emerged to exercise citizenship and strengthen the diversity of cultural identities. Chilean artistic activism today, unlike other historical moments, is a direct expression of citizen participation. It is no longer just artists who contribute to social and protest movements with their work: now, it is the citizens who use artistic expression as a practice of political participation. From an intersectional and feminist perspective, this book is an invitation to study and reflect on the aesthetic and political dimension of performance and its potential to establish justice and symbolic reparation when the State is absent. Furthermore, it incentivises a conversation about the ritual, pedagogical, and visionary dimension of art and its infinite possibilities of expressive and discursive resources. Performance art reimagines possible futures embodying the political demand, always loaded with memory, reclaiming the public space. RESUMO A alimentação é o fator que mais onera um sistema de produção animal. Assim, a utilização de diferentes estratégias de alimentação dos animais ainda é o grande desafio da nutrição animal, principalmente, levando em consideração as exigências nutricionais de diferentes categorias de ruminantes, em especial bovinos em regiões tropicais, haja vista que a sazonalidade na produção de forragens afeta diretamente a produção bovina, promovendo inadequação no atendimento das exigências nutricionais dos animais principalmente em minerais e vitaminas. Uma alimentação que (...) não atenda as exigências nutricionais dos ruminantes gera prejuízos no sistema de produção, além de, em casos mais graves, ocasionar a perda do animal. Estudos que abordam o efeito e a importância de vitaminas e minerais na nutrição bovina são escassos e necessários. Recentemente a National Research Council (NRC) apresentou novos registros das exigências nutricionais das vitaminas e minerais. Essas alterações proporcionam um impacto econômico significativo em relação à nutrição animal. Thus, the use of different animal feeding strategies is still the great challenge of animal nutrition, taking into account the nutritional requirements of different categories of ruminants, especially cattle in tropical regions, given that seasonality in forage production directly affects cattle production, promoting inadequacy in meeting the nutritional requirements of animals, mainly in minerals and vitamins. A diet that does not meet the nutritional requirements of ruminants generates losses in the production system, in addition to, in more serious cases, causing the loss of the animal. Studies that address the effect and importance of vitamins and minerals in bovine nutrition are scarce and necessary. Recently the National Research Council (NRC) presented new records of the nutritional requirements of vitamins and minerals. These changes provide a significant economic impact on animal nutrition. Edmund Burke, known for his full condemnation of the French Revolution, has ascribed to the French philosophes the making of that turn of mind which eventually created the conditions for the total subversion of France. This paper aims at investigating Burke’s interpretation of Rous- seau: in fact, him he considers to be the father of that disposition – which he calls vanity – that has inflamed the spirits of an entire population. «A silent revolution in the moral world preceded the (...) political, and prepared it», Burke writes. Hence, by delving into A Letter to a Member of the National Assembly (1791), known to be Burke’s most extensive critique of Rousseau’s thought, and by constantly referring to his broader intellectual production, this paper tackles the question on the charges Burke imputes to Rousseau in fermenting that very disposition of mind which prepared the ground for the Revolution. Not political doctrines, but examples derived from Rousseau’s very life and his proper pedagogic reflections, according to Burke, have had the great- est responsibility in shaping the revolutionary mind.
