Food labels serve important informational and signaling purposes however, the subjective beliefs associated with ethical labels such as farm animal welfare labels and their influence on anti-consumption behavior are not well-understood. This paper aims to address how subjective beliefs about FAW labels affect the milk anti-consumption behavior for different segments of consumers. Data from an in-person opt-in survey conducted in the US were used to address the objectives of this study. Information on respondents’ sociodemographic profile, milk choice and perceptions about (...) FAW was collected. Data were analyzed using multivariate regressions. The results show that FAW labels served as heuristic cues for higher environmental quality and health. The presence of labels also evoked a positive feeling in consumers. The FAW halos impacted milk anti-consumption. The effects however depended on preference type—milk versus plant-based alternative milk beverages. The results highlight the possibility of appealing to the relevant FAW subjective beliefs by stakeholders interested in fostering anti-consumption behavior as a means to achieving more sustainable consumption behavior. Synthetic meat products promise to serve as inexpensive substitute proteins that can replace meat made through conventional animal agriculture. At least some of the excitement about these products stems from ethical and moral concerns regarding animal welfare, environmental costs, and human health. A governing idea behind the creation of substitute meat is that consumers will recognize the ethical and moral concerns of conventional production and substitute one (better) product for another (worse) product. This approach, however, overlooks a much more practical (...) complication: the problem of indifference. That is,--consumer demand does not in practice greatly hinge on the well-known moral issues in conventional animal agriculture, as evident by the immense scale of the current meat market. In this paper, we ask how consumer indifference and producer strategy might influence the uptake of clean meat in the economic market. We suggest that thinking about the challenge in this way reveals powerful presuppositions that confuse our thinking about the potential of synthetic meat. Rather than understanding synthetic meat in terms of its substitution value, we propose approaching the challenge of synthetic meat from the standpoint of reasons-for and reasons-against. Doing so, we suggest, exposes the complications of “causal indeterminacy” that in turn implicate our thinking both about moral responsibility and the broader nature of technocratic solutions to environmental problems. We argue instead that synthetic meat offers an exciting and novel product, but likely not a substitute that will displace the conventional protein industry. (shrink)

Industrial animal agriculture is a significant driver of climate change, habitat loss, and the ongoing extinction crisis, all of which will continue to accelerate as global demand for animal products grows. Plant-based alternatives to animal products, which have existed for over a thousand years, offer a potential solution to this problem, as the intersection of recent technological innovation and shifting capital investment trends have ushered in a new era of alternative proteins that are redefining food categories like meat, eggs, and (...) milk. To better understand these evolving food forms, their attendant technologies, and the opportunities they afford for ameliorating the impacts of industrial animal farming, this article provides a genealogy of plant-based alternative proteins, with a particular focus on the current era and the role that design principles like biomimicry and skeuomorphism play in reproducing the organoleptic properties (the sensorial, experiential aspects) of animal products. Comparing the alternative protein market to other markets in which more sustainable foods and energy have failed to displace their environmentally destructive counterparts, it concludes by considering if whether creating novel new protein forms, rather than imitating conventional animal products, may afford a more promising path toward transformation of the food system. Vertical farming is a rapidly expanding type of indoor controlled environment agriculture whose promises have attracted widespread praise and considerable early-stage capital in recent years. Among vertical farming’s many claimed benefits, per-area productivity is frequently mentioned, proposing crop yields at least two orders of magnitude higher than outdoor field agriculture. These extremely high yields form the basis for a theory of land use change whereby yield-increasing technologies reduce or reverse the expansionary demands of lower-yielding farms, retaining or returning those areas (...) to “wild nature”. In a sensational articulation of this kind of intensification, from 2007 to 2017 many vivid proposals portrayed centrally located skyscraper farms as a key strategy for building self-sufficient cities. This skyscraper articulation of vertical farming captured the public imagination and led to substantial investment into contemporary vertical farming facilities, the majority of which are in large suburban high-ceiling single-story warehouses. This paper traces the politics of vertical farming’s land-sparing narratives beginning early in the twentieth century, with a closer analysis of two contrasting historical examples: Othmar Ruthner’s 1960s tower greenhouses, which closely resemble the imaginary skyscraper farms of the 2010s; and Noel Davis’ 1980s PhytoFarms, which more closely resembles the well-funded warehouse vertical farms of the 2020s. This analysis suggests that, despite their high yields, the extremely high capital investments needed to build the precise controlled environments of today’s vertical farms preclude the profitable production of staple crops, rendering them unlikely to fulfil their land-sparing promises.
