This paper analyzes politics of food education in Japan where food education has become one of the central motifs of food policy in recent years. It describes the emergence of private enterprise institutions that offer credentials for people as “food education experts,” the majority of whom are women. Based on a survey of more than one hundred food education experts, the paper explores motivations of these women and finds that the reasons for the popularity of food education certifications are not (...) so much that women wanted to challenge the dominant food system—as agrofood scholars may have expected or hoped for—but for reasons related more to the gendered career expectations and pressures for women to conform to a culturally-scripted feminine ideal. The paper’s importance beyond Japan lies in the discussion of dynamics and implications of privatization of food education. “Privatization” indicates a shift in the location of control and in what is considered to be “necessary” knowledge about food. Subject to market logic, food education is at risk of becoming an exercise of superficial mastering of “sanitized” information. Furthermore, at the core of privatization of food education is an increasingly pervasive approach to food education that I term “food literacy” approach, based upon a deficiency framework which posits individual knowledge and skills as sole reasons for inappropriate food choices, dietary behaviors, and culinary practices. Not only is the food literacy approach highly individualistic and apolitical, but it also enables and exacerbates the privatization and gendered pressures of food education. (shrink)

Local food is a popular subject among consumers, as well as food producers, distributors, policymakers and researchers in many countries. Previous research has identified that the definition of local food varies by context, and from country to country. The literature also suggested that environmental sustainability is one of the goals for many of the local food movements. While there is a substantial body of literature on local food internationally, limited research has been undertaken in New Zealand. This paper aims to (...) understand how consumers define local food, what attributes they associate with local food, and the extent to which life cycle-based environmental aspects are represented in these attributes. Primary research employed quantitative methodology. This study identified that a majority of the respondents considered that local food may be defined as food that was produced in New Zealand and that support for community was the most important attribute associated with local food. Reduced GHG emission, conserving the landscape, and organic production were the life cycle-based environmental attributes that were associated with local food. This study provides a basis for further research into understandings of local food in New Zealand and how to improve communication among different social actors with respect to demand and supply of local food. Upland Japan suffers from extreme depopulation, aging, and loss of agricultural, economic, and social viability. In addition, the absence of a successor generation in many marginalized hamlets endangers the continuation of local knowledge associated with upland agricultural livelihoods and severely limits the prospects of rural revitalization and development. Resettlement by incomer organic farmers represents an opportunity to both pass on valuable local knowledge and rejuvenate local society. Survey and interview data are used to explore the knowledge dynamics at play in (...) upland Japan between local and incomer organic farmers. Using a “knowledge culture” framework, socio-cultural and symbolic barriers and spatial conditions limiting local knowledge exchange are identified and analyzed. Despite a number of reasons to suggest affinity and natural alignment toward knowledge sharing, each group’s ideas of “legitimate knowledge” and acceptable behavior have contested the field of communication and confused the negotiation process. Building on previous studies of farmer’s knowledge networks, examples in this study suggest that negotiation between knowledge cultures can be facilitated by both active means and intrinsic factors, and be derailed because of physical and temporal symbolic references. The degree to which locals and incomers collaborate and identify with each other as stakeholders with a common future may determine the extent to which local knowledge, especially local knowledge from past agricultural regimes, can play a role within upland endogenous development. The increasing popularity of local food consumption can be attributed to the heightened awareness of food safety concerns, carbon emissions produced from food transportation, and an understanding of how large corporations’ obtain their food supplies. Although there is increasing discussion on both the local and organic food movement independently, there is not a wide availability of literature examining the motivations and perceptions of consumers with regard to farmers’ markets. Issues such as perceptions about what type of food consumers are purchasing (...) at markets, nor the main motivations for frequenting such establishments are discussed. Therefore the purpose of this study was to determine consumer motivations, benefits, and perceptions of farmers’ markets. Using the case study location of Toronto, Canada, this study surveyed 300 participants during the fall of 2011. Findings indicated that the main purpose for visiting famers’ markets is not solely to fulfill grocery needs. Quality of products offered and the ability to support the local community were the primary motivators to visit the markets. (shrink)
