During the past few decades, the global food system has confronted new sustainability challenges related not only to public health and the environment but also to ethical concerns over the treatment of farmed animals. However, the traditional threedimensional framework of sustainable development is ill equipped to take ethical concerns related to non-human animals into account. For instance, the interests of farmed animals are often overridden by objectives associated with social, economic or environmental sustainability, despite their vast numbers and influence on (...) contemporary societies. Moreover, sustainability policies necessarily involve an element of ethical evaluation; yet this element is not explicitly incorporated in prevailing frameworks of sustainable development. Our purpose in this article is to address these shortcomings by developing a Sustainability Matrix that recognizes the need to consider food system sustainability from the perspective of all interest groups affected by the issue under consideration, from a plurality of ethical standpoints. Combing sustainability principles with the basic idea of an ethical evaluation tool, the proposed Sustainability Matrix evaluates the sustainability of food-related systems, decisions and policies from the perspectives of three major strands of ethical theory and from the perspectives of human beings, farmed animals and wildlife. In terms of policy implications, the Sustainability Matrix can be applied in deciding on the specific targets of food system sustainability that can then be utilized as a basis for designing policies and measures towards the achievement of these goals. This article uses foodscapes as a lens to explore the potential of ecovillages’ food practices towards enhancing sustainable food systems. Ecovillages are collective projects where members attempt to integrate sustainability principles into daily community life. In these communities, food acts, not only as an element of social life, but also as a venue through which to interact with mainstream food systems and society. Yet, how food practices at ecovillages contribute to sustainable food systems remains vague. This article proposes foodscapes, as (...) a lens, for exploring the sustainability potential of place-based food practices in ecovillages, while also directing attention to how these practices intersect with networks at broader social and spatial scales. It asks, how can we better understand and draw from sustainable food practices, when considering these as both, place-based and relational? And what is the potential and the role of ecovillage communities to contribute to broader sustainable food system change? Drawing on ethnographic and food mapping methods, the article explores selected food practices at three ecovillage communities in the United States. Using social practice theory for “zooming in” on place-based practices and “zooming out” to examine relational networks, we investigate how these communities create internally sustainable food systems, while externally bridging themselves with broader urban and rural communities. Through viewing ecovillage food practices as place-based and relational, we develop a broader and spatially-focused understanding of food system sustainability. (shrink)

A shift towards more environmentally friendly and socially responsible food systems is a key step in the achievement of global sustainable development goals. To obtain significant results, however, it is essential to find participative ways to frame food sustainability objectives, so they can speak to a wide array of actors of change. This article addresses the promising potential of empowering actors across the food system to make a shift in their food choices, by facilitating the association of food sustainability values (...) with contemporary moral issues. In this context, a conceptual framework for a transition towards food sustainability is proposed, based upon the concept of the moral circle. This approach transcends the human-centred methods enacted in traditional sustainable development agendas, offering an alternative with a more holistic perspective. It is expected that emphasising moral reflection around sustainability might encourage societal participation in the creation of sustainable, fair and healthier food systems. (shrink)
