Abstract
This article had its inception in an October 2006 presentation titled "Sustainable Dining at a Liberal Arts College" (with Philip Ackerman-Leist and Heather) at Terra Madre: International Gathering of Food Communities in Turin, Italy. The Terra Madre gathering is the international hub of the Slow Food movement. The article contrasts "slow food education" with "fast food education." It is currently published in Italian only.
